Carton Brewing Prix Fixe Dinner at Jimmy's No. 43

Carton Brewing Company's Augie Carton will be in the house with five of his NJ brews that we’ll pair with a five-course tasting menu. Augie is that special brewery owner who has an appreciation of fine dining as well as good beer. He was inspired by the spiced duck breast at Eleven Madison Park and created a beer to match. His “Decoy” is a staple pairing on the 11MP menu: “Duck and Decoy.”

Augie and Jimmy will pair five Carton beers with the early spring bounty of the greenmarkets: ramps, sea scallops, hudson valley duck with a proposed menu (and Augie’s notes… he’s kind of a poet!) as a guideline of what to expect on Monday (subject to change):

Long Island Sea Scallop Ceviche, paired with Carton Boat Session Ale—”You can’t go wrong with a Boat and citrus/light shellfish app!”Ramp and Ricotta Pasta Primavera paired with Comma Ale—”Comma could kill it with a pasta primavera-type dish; something richer but pepper heavy.”Duck Confit paired with Carton Brunch Dinner Grub Ale—”Being Jimmy’s, I think there should be a cassoulet with BDG.”Seared Duck Breast paired with Decoy Brown Ale.Raisin/Moroccan Bread Pudding paired with Shipwreck Ale—”I’d do a raisin/Moroccan inspired savory leaning desert with Shipwreck.”
